Red Chicken Adobo

Adobo is a well-known Filipino cuisine served with rice both at daily meals and during feasts. It is also one of the most popular dish tried by foreigners and tourists who visits the beautiful country of the Philippines. Adobo is relatively long shelf-life is due to one of its primary ingredients, vinegar, which inhibits the growth of bacteria.


I added some twist on my adobo recipe, aside from the original ingredients, I also included Ketchup to add up sweet and sour flavor-- that's why it is called Red Chicken Adobo. (*_*)
                                              

Ingredients
2 tablespoons vegetable oil
1 kilo chicken, cut into pieces
1 large onion, quartered and sliced
2 tablespoons minced garlic
1/3 cup white vinegar
2/3 cup  soy sauce
 5 tablespoon Ketchup
1 tablespoon black pepper
1 tablespoon salt
 1 potato, cut into desired size


Directions

  1. Heat the vegetable oil in a large pan over medium-high heat. Saute onion and garlic. Put chicken pieces.
  2. Pour in vinegar and soy sauce, let it simmer for 6-10 minutes.
  3. Dissolved ketchup into 1 cup water, pour it on your pan and season with black pepper and salt. Add potatoes, increase the heat to high, and bring to a boil. Reduce heat to medium-low, cover, and simmer until the chicken and potatoes is tender and cooked through.
