Shrimp Chowder Soup

Holiday season is over. Most of us have indulged ourselves with delectable traditional Christmas favorites and probably gained weight. I'm sure dieting is one of your top priority this year. (same here guys!) 

We can't deny that eating is so much fun but of course we cannot set aside the fact that we still have to be conscious with what we eat as well as with our figure especially for the ladies out there. 

Few months from now, summer is here to come. We'll all try our best to lose weight and trim down our fats as soon as possible.

If you want to take a break from festive fare, here's a delicious treat which will surely help you achieve your goal- Shrimp Chowder Soup.

Ingredients:

1/4 cup butter or margarine
1 kilo shrimp, shelled
1 big can evaporated milk (370 ml)
cheese
2 tbsp. garlic
1 chopped onion
5 cups water
2 pcs. chicken cube
2 potatoes, peeled and cubed
salt and pepper to taste
chopped parsley for garnish
How to cook:

Saute butter or margarine, garlic, onions and shrimp. Set aside. In a sauce pan, boil water. Add chicken cubes, cheese and potatoes. Let it boil. Add sauteed shrimps and evaporated milk. Boil for a few minutes. Season to taste. Garnish with chopped parsley before serving.

Add this recipe to your meal plan. I know it's not that easy to be slim but with proper diet and exercise, sooner or later you'll be ready to flaunt your summerrific body wearing your pretty hot pair of bikini.

Ginataang Tulingan

Happy September 17 certified Foodaholics! I guess it's been two weeks since I started this blog, and the feedback I received everyday is pretty amazing. As I open my laptop, I always look forward to check my e-mail and read comments and short messages regarding my blog. I'm glad to know that my work is very much appreciated (Thanks to you guys!). To be honest, I don't blog to impress... I'm here to express, share and of course-- to EXPLORE the world of culinary.

As I started experiencing a huge variety of food, I discover lots of different new flavors. I learned to recognized that a delicious food is not just about sweet and salty, it may consist of combination of all kinds of flavor.
A yummylicious dish is made perfectly with right choice of ingredients just like my Ginataang Tulingan (skipjack tuna). This is one of my old favorite which my Lolo Rudy made quite often during my childhood. It is made of local Tulingan and coconut milk, stewed with vegetables like eggplant and mustasa.


Ingredients:
  • 1/2 kilo tulingan (skipjack tuna), cleaned and cut in half
  • 1/2 cup coconut milk
  • 3 cloves garlic, chopped
  • 1 onion sliced
  • 2 eggplant cut diagonally
  • 2 tbsp. fish sauce
  • 1 cup water
  • 2-3 tbsp. vinegar
  • 2 green chili or siling haba
  • 1 bundle mustasa
  • 3 tomatoes sliced
  • pepper
  • salt

Gently rub fresh Tulingan with rock salt. Set aside for a few minutes so that the salt will stay on the fish to add more flavor. In a pan or wok, put the fishes, add the tomatoes, onion and garlic. Let it simmer. Season with vinegar, pepper and salt if you need to adjust the taste. Place your pot over medium heat and allow to simmer till most of the water is gone. Then pour the pure coconut cream. Add the eggplant, green chili and mustasa. Allow it to boil before turning off the heat.

Shrimp in Sour Soup

What a beautiful day Foodaholics!

Today I'll be sharing one of my favorite food dish--Sinigang! A Pinoy style dish famous for its variety of ingredients and sour taste. Sinigang often incorporates fish, pork, chicken, shrimp, or beef. This time I’ll be using Shrimp for this recipe. 


 Ingredients

 1 Kilo Shrimp 
8 pcs Tamarind (Sampaloc) or 1 pack Sinigang Mix 
1 big Onion (diced) 
3 big tomatoes (quartered) 
2 pieces Radish (sliced) 
1 bundle Sitaw (Strringbeans) 
2 eggplant (sliced)
1 bundle Kangkong 
4 okra
8 cups ricewash or water 
2 tbsp. vegetable oil
Salt or Patis (fish sauce)

Cooking Instructions:


1. Put some oil in a casserole, sauté onion and tomatoes.
2. Bring water to a boil.
3. Add the shrimp, and simmer for 3 minutes.
4. Add the the vegetables (string beans, radish, okra, eggplant) and simmer for another 3 minutes.
5. Add the Sinigang mix or tamarind.
6. Season with salt and fish sauce if your not yet satisfied with the taste.
7. Lower the heat, then put the kangkong leaves.
8. Serve hot.

I love having this dish because the taste of the shrimp complements the sour taste of the soup. Yum... yum... yum!

Kinamatisang Tilapia

Blessed Day to all Foodaholics!

Today, I'll be sharing one of the fish dishes I usually cook at home-- Kinamatisang Tilapia. It is a very simple recipe yet delicious. The soup base has the right taste of tomato as it becomes soft in the process. I'm glad to share this recipe with you.


Ingredients:

1 onion, chopped into quarters
3 large tomatoes
4-6 cups of water or rice wash
1 large whole Tilapia or you may cut it into half
1 tablespoon salt
1 teaspoon pepper
2 eggplant, cut into four
4 okra
1 bundle pechay or kangkong


Procedure:

Pour the water into a pot, let it boil then put the tomatoes, simmer for 3 minutes or until the tomatoes are cooked. Add the fish and onions. Season with salt and pepper. Bring to a boil. Be careful about stirring, as the cooked fish can break up easily.  Add in the eggplant and okra. Simmer for a couple more minutes then add the pechay. Serve hot.

Yummylicious In love na Bangus Sinigang with Ginger Bits

Hello there Foodaholics! Here's my first dish enrty-- I called it "In Love na Bangus (Milkfish) Sinigang with Ginger bits." Oh! your wondering why is it "in love" --it's because aside from Kangkong leaves, I also added some "puso ng saging" (or banana heart/ bud-according to my friend Lea) to this dish.

This dish is so easy to prepare. First, you just have to complete all the necessary ingredients:

1 large milk fish (bangus) ;  cut into desired  pieces
1 ginger bits
oil
3 tomatoes, quartered
1 onion; sliced
5 string beans cut into 2” lengths
1 cup kangkong leaves
1 puso ng saging (banana heart/bud) sliced
Sinigang mix or 2 crushed tamarind (sampalok)
5 cups water
Salt or fish sauce (patis)
pepper
 --you may also add other ingredients like:

1 radish; sliced
4 okra, sliced
1 eggplant, sliced

Here's how to cook it: 

1. Put some oil in a casserole, sauté onion and tomatoes.
2. Bring water to a boil together with the ginger.
3. Add the bangus, and simmer for 5 minutes.
4. Add the the vegetables (string beans, radish, okra, eggplant) and simmer for another 5 minutes.
5. Add the Sinigang mix or crushed tamarind.
6. Season with salt and fish sauce if your not yet satisfied with the taste.
7. Lower your heat, add the banana heart/bud and kangkong leaves, let stand covered for 2 minutes.
8. Serve hot.--enjoy your meal!
