Bulanglang topped with pork



Bulanglang is a vegetable stew dish which is very popular in the Philippines because it is healthy and inexpensive. It's different from pinakbet, it is soupier and includes variety of local vegetables.


Ingredients:

small sliced fried pork
2 tablespoons lard
1 teaspoon garlic, minced
1/4 cup onions, minced
2 cups rice washings
1 cup eggplant, diced
1 big patola, diced
1/2 cup squash diced
1/2 squash leaves
4 okra
1 medium size ginger, chopped

STEPS IN COOKING

1. Use the lard to saute the garlic, onions, and ginger.
2. Add the two cups of rice washings. Bring to a boil. 
3. Add the vegetables starting with the squash, which takes the longest to cook. The leafy vegetables should be added last.
4. Simmer for 3-5 minutes.
5. As soon as the vegetables are done, remove from heat and transfer to a serving dish.
6. Place pork bits on top.
